Watermelon, Watermelon Everywhere

the hotter it gets, the more i love watermelon.  it’s always so nice and cold, sweet, juicy, and refreshing.

i’ve always kind of assumed that watermelon has pretty much zero nutritional benefit besides having a high water content, but the (legit) National Watermelon Promotion Board says different:

“A 2-cup serving of watermelon is an excellent source of Vitamins A, B6 and C.  A two-cup serving of watermelon is also a source of potassium, a mineral necessary for water balance and found inside of every cell.  Watermelon is the Lycopene Leader in fresh produce, having higher concentrations of lycopene than any other fresh fruit or vegetable.  Watermelon has heart healthy properties because it is naturally low in saturated fat, total fat and cholesterol.”  (http://www.watermelon.org/watermelon_nutrition.asp)

this makes me feel ton loads better about eating literally one fourth of a watermelon each night for the past 3 – 4 nights.  i have made myself near sickness gorging on this stuff, but i keep forcing it down because it is just. so. good.  better than reese’s, though, right?
